At the end of the summer, a more refined honey is harvested from the sap of the cork oak and holm oak trees, with a strong, persistent and woody flavour, characteristic of its Ruby colour with reddish nuances.
It contains complex sugars, mineral salts and amino acids. It is an excellent sweetener in pastry recipes or as an accompaniment to cheeses and other delicatessen products.
