Ingredients
- 1 small pumpkin
- 2 tablespoons of honey
- 1 tablespoon of olive oil
- 1 teaspoon cinnamon powder
- 1 teaspoon cumin powder
- 1/2 teaspoon grated nutmeg
- Salt and black pepper to taste
- Sprigs of fresh thyme (optional)
Preparation
- Preheat the oven to 200 °C. Peel the pumpkin and cut into cubes or slices about 2cm thick. Place the pieces on a baking tray, spreading them out well so that they are in a single layer.
- In a small bowl, combine the honey, olive oil, cinnamon, cumin, nutmeg, salt and pepper. Stir well until you have a smooth sauce.
- Pour the glaze over the pumpkin pieces and mix well with your hands or a spatula so that they are all covered.
- Bake the pumpkin for 25 to 30 minutes, stirring halfway through so that it bakes evenly. The pumpkin should be golden and caramelised on the edges.
- Remove from the oven and, if you like, garnish with sprigs of fresh thyme before serving.
