Ingredients

  • 1 small pumpkin
  • 2 tablespoons of honey
  • 1 tablespoon of olive oil
  • 1 teaspoon cinnamon powder
  • 1 teaspoon cumin powder
  • 1/2 teaspoon grated nutmeg
  • Salt and black pepper to taste
  • Sprigs of fresh thyme (optional)

Preparation

  1. Preheat the oven to 200 °C. Peel the pumpkin and cut into cubes or slices about 2cm thick. Place the pieces on a baking tray, spreading them out well so that they are in a single layer.
  2. In a small bowl, combine the honey, olive oil, cinnamon, cumin, nutmeg, salt and pepper. Stir well until you have a smooth sauce.
  3. Pour the glaze over the pumpkin pieces and mix well with your hands or a spatula so that they are all covered.
  4. Bake the pumpkin for 25 to 30 minutes, stirring halfway through so that it bakes evenly. The pumpkin should be golden and caramelised on the edges.
  5. Remove from the oven and, if you like, garnish with sprigs of fresh thyme before serving.
