Ingredients

  • 500 g unleavened wheat flour
  • 100 g cornflour
  • 1 teaspoon baking powder
  • 1 tbsp ground cinnamon
  • 1 tbsp fennel
  • 240 g sugar
  • 150 g of cowpeas
  • 1 orange
  • 50 g honey
  • 2 eggs
  • 1 yolk

Preparation

  1. Mix the flours, cinnamon, fennel, yeast and sugar in a bowl.
  2. Make a hole in the centre and add the melted vaqueiro, orange juice and zest, honey and eggs.
  3. Mix everything together until you have a smooth, homogeneous dough.
  4. Cover with cling film and refrigerate for 1 hour.
  5. Shape them and place them on a baking tray lined with greaseproof paper.
  6. Brush with the egg yolk and bake in a preheated oven at 180ºC for 20 minutes.
