Ingredients

  • 4 chicken breasts
  • 1/4 cup honey
  • 1/4 cup mustard
  • 2 tablespoons of olive oil
  • 1 tablespoon apple cider vinegar
  • 2 chopped garlic cloves
  • Salt and pepper to taste
  • Fresh rosemary

Preparation

  1. Mix the honey, mustard, olive oil, vinegar and chopped garlic in a bowl. Add salt and pepper to taste.
  2. Place the chicken breasts in a bowl. Pour the marinade over the chicken, making sure all the pieces are well covered.
  3. Leave to marinate in the fridge for at least 30 minutes.
  4. Preheat the oven to 200°C.
  5. Bake in the preheated oven for about 25-30 minutes, or until the chicken is cooked through and golden brown.
  6. If you like, add sprigs of fresh rosemary to the chicken before roasting for an extra touch of flavour.
  7. Serve the honey and mustard chicken with roast vegetables or a fresh salad.
